Spicy Roasted Chicken with Tomatoes and Tarragon

------------------------------------------------



Serve with basmati rice or quinoa to soak up the sauce, a green vegetable
Such as asparagus and a salad

4 cups cherry or grape tomatoes, halved

1/4 cup olive oil

5 cloves of garlic, crushed

2 tbsp chopped fresh tarragon (or 1 tsp.dried)

1-2 tsp hot red pepper flakes (or according to taste)

1/2 tsp each salt

1 tsp pepper

4 boneless, skinless chicken breasts



1. Preheat oven 450F



2. In large bowl, toss tomatoes with olive oil, garlic, 1 tbsp of tarragon
(if using dried add all tarragon) and red pepper flakes.



3. Place chicken on rimmed baking sheet. Pour tomato mixture over chicken,
Arranging tomatoes in a single layer around chicken. Sprinkle with salt and
Pepper. Roast for 30-35 minutes or until chicken is no longer pink inside.
Transfer chicken to platter. Spoon tomatoes and juices over. Sprinkle with
Remaining fresh tarragon.



Makes 4 servings
