George-
You can skip the oil all together when you brown the meat. The meat will have enough fat to cook. Another thing I would do would be to blot the meat or drain & rinse it (before adding the other ingredients).
As a side note .... There's really no substitute for oil except when baking in which case you can substitute equal parts unsweetened applesauce for oil. I've never noticed a difference when I've done this with any recipe.
Now, back to the recipe .... Instead of just egg whites, I would use egg substitute (1/4 c for each egg). I don't thing whites only with cook with the right consistancy, but I could be wrong.
The recipe sounds delicious & I will try it myself one day.

Eggscellent Bean and Beef Burrito
Recipe courtesy Aaron McCargo
Show: Big Daddy's House
Episode: Keep me in Bed
1 (10-ounce) can refried beans (use fat free)
1 teaspoon sour cream (fat free)
6 jumbo eggs (egg whites)
Salt and freshly ground black pepper
1 tablespoon chives, minced (I'll skip this....yuck!)
2 tablespoons olive oil (can you make this any healthier?)
1 pound ground beef (turkey meat)
1 small onion minced
1 clove garlic minced
1 tablespoon minced poblano pepper
5 (6-inch) flour tortillas (low fat tortillas)
1 cup shredded Colby cheese (reduced fat cheese)
Salsa, for topping
Sour cream, for topping (nooooo way......I'll use it to mix in the beans
but not to put on top! LOL! Don't like sour cream!)
In a small bowl add refried beans and sour cream. Mix together and place
in microwave for 2 minutes.
Add 6 eggs and a dash of salt and pepper another bowl. Whip for 1 minute
and add chives.
In a large saute pan over medium high heat, add oil. Add meat and brown
until cooked, approximately 6 minutes. Add onions, garlic and pepper and saute
until fragrant. Season with salt and pepper and set aside.
In a saute pan, add oil. Pour about 2-ounces of egg into pan. With a
rubber spatula, flip eggs to cook other side. Repeat with remaining egg.
Lay tortillas out on a cutting board. With a rubber spatula, spread
refried beans onto tortilla. Place about a 1/2 cup of beef mixture in center.
Fold tortilla into a burrito. Repeat with remaining tortillas.
Wrap egg on the outside of the tortilla wrap. Top with cheese. Place in
microwave for 3 minutes to melt cheese. Top with salsa and sour cream.
Sound okay or still too fattening???
