[CyberTOPS] Zucchini un-apple pie delicious

You'all  have got to try this,   it is incredible....  I made it this
morning,  and Don, Keith and I had a piece after dinner tonight.   If I didn
t know what it was made of, I'd never in a million years guess zucchini.  It
was delicious.


Zucchini Un- Apple Pie


5 cups zucchini (you can use a really big one)
1 cup sugar  (you can substitute Splenda)
1/4 cup brown sugar
1 tsp. cinnamon
1/4 tsp nutmeg
1/4 tsp. allspice
1 1/2 tsp. cream of tartar
2 Tablespoons flour
pinch salt

Peel and de-seed zucchini. Slice like you would an apple. Cover with water
and boil at least 2 minutes. Drain and set aside to cool. Mix all other
ingredients together and stir gently through zucchini. Pour into 9 inch pie
shell and cover with top crust. Bake at 400 degrees for 10 minutes then 350
degrees for 20 minutes or until brown.

(trust me - this is really good) tastes just like an apple pie.
